Fried Dory Fish With Sweet & Sour Sauce

Serving Suggestion: 4 – 5 pax

Ingredients:
500 g                                                                                     Dory, cut into bite size
½ tsp                                                                                      AJI-NO-MOTO®
½ tsp                                                                                      Salt
½ tsp                                                                                      White pepper powder
Sufficient                                                                            Cooking oil

Ingredients A: mixed evenly
1 tbsp                                                                                    Rice flour
1 tbsp                                                                                    Tapioca flour
1 tbsp                                                                                    Cornflour
1 tsp                                                                                       Baking powder

Sweet & Sour Sauce:

Ingredients A:
2 tbsp                                                                                    Tomato sauce
2 tbsp                                                                                    Chilli sauce
1 tbsp                                                                                    Vinegar
5 tbsp                                                                                    Pineapple juice

Ingredients B: cut into cube size
1                                                                                              Tomato, deseeded
2                                                                                              Red Chilli, deseeded
1                                                                                              Onion
150 g                                                                                    Cucumber
100 g                                                                                    Pineapple

Method:
1. Seasoned fish with AJI-NO-MOTO®, salt and white pepper powder for 10 minutes.
2. Coating the fish with ingredients (A).
3. Fry until golden brown, ready to serve.

Method(Sweet & Sour Sauce):
1. Mix well all ingredients (A) and (B), cook over medium heat until boiling.
3. Ready to serve.

Tip: Marinating the fish with a squeeze of lemon juice will remove any fishy odour.
