Prawns and Anchovies Crackers

Ingredients:

300 g
1 tbsp
1 tsp
¼ tsp
2 tsp
500 g
70 – 100 ml
Prawn, washed and clean
TUMIX® Anchovy Stock
AJI-SHIO® Flavoured Pepper
AJI-NO MOTO®
Baking powder
Tapioca flour
Water

Method:
1.  Place prawns into food processor and allow to blend till fine.
2. Combine all the rest of the ingredients into the food processor to blend to a soft dough.
3. Divide the dough to 5-6 pieces, roll and wrap with cling wrap and allow to steam for 30 minutes.
4. Allow to cool and keep the rolls into the fridge (to harden).
5. Slice the prawn rolls thinly and allow to sun for a couple of days to dry. Fry in oil and keep in airtight containers.
