Chicken Drumsticks with Strings of Love

4 pieces Chicken drumsticks
2 tbsp Olive oil
2 pieces Bay leaf
50 g Onion, chopped
1 tbsp Diced celery
50 g Carrot, diced
150 ml Water
200 g Fresh tomato, chopped
½ cup Tomato puree
1 ½ tbsp Dried oregano
200 g Angel hair spaghetti
Ingredients A: marinade
½ tsp Salt
1 tsp Oyster sauce
1 tbsp Ginger juice
1 tsp Lemon juice
¼ tsp AJI-SHIO® Flavoured Pepper
Ingredients B: seasonings
3/4 tsp Sugar
A dash of Salt
2 tbsp TUMIX® Chicken Stock Seasoning
½ tsp AJI-SHIO® Flavoured Pepper
Ingredients C: garnishing
A sprig of Coriander leaves
5 Cherry tomatoes, halved
4 Black olives, sliced
Some Pre-fried potato fries (optional)
  1. Season chicken drumsticks with marinade (A) for 30 minutes. Heat 1 tbsp olive oil in a non-stick saucepan. Pan-fry drumsticks over medium low heat until golden brown on both sides. Remove and set aside.
  2. Add 1 tbsp olive oil to the saucepan and sauté bay leaf, onion, celery and carrot until fragrant.
  3. Add chicken and water. Bring to a boil.
  4. Reduce the heat and add chopped tomatoes, tomato puree, seasonings (B) and dried oregano. Simmer until meat is tender.
  5. Cook angel hair spaghetti in boiling water. Add a dash of salt and a few drops of olive oil. Cook until al dente. Dish out and add in butter. Toss well.
  6. Add garnishing. Serve spaghetti with chicken drumsticks and gravy.
