Chicken Feet Soup

Chicken Feet Soup

Serving suggestion: 4-5 pax

Ingredients:
2 tbsp Cooking oil
1 stick Cinnamon stick
2 Star anise
3 Cardamom
2 tsp Soup spices
600 g Chicken feet
1.5 litre Water
2 ½ tsp AJI-SHIO® Flavoured Pepper
3 tsp Salt
1 tsp Fish sauce
1 tsp Sugar
2 pieces Kaffir lime leaves
2 Potato, cut
1 Carrot, cut
3 Bird eye’s chili, pounded (optional)
2 tsp Lime juice
1 stalk Coriander leaves
Ingredients (A): pounded
1 Coriander stem
5 Shallots
3 cloves Garlic
1 inch Ginger
Method
  1. Heat the cooking oil, sauté ingredients (A) until fragrant.
  2. Add in cinnamon stick, star anise, cardamom and soup spices.
  3. Add in chicken feet, water, AJI-SHIO® Flavoured Pepper, salt, fish sauce, sugar, kaffir lime leaves.
  4. Boil for 20 minutes over medium heat or until the chicken feet have become tender.
  5. Add in potato, carrot and bird eye’s chili, boil for another 20 minutes.
  6. Turn off the heat and add lime juice, mix well.
  7. Add coriander leaves and ready to serve.
