Crispy Spinach

Serving Suggestion

Serving suggestion: 4-6 pax

½ cup Wheat flour
½ cup Rice flour
¼ tsp AJI-NO-MOTO®
¼ tsp Salt
1 cup Cold water
2 cups Cooking oil
50 g Spinach leaves, cleaned
Ingredients: sauce
80 g Palm sugar, grated
½ cup Water
3 Red chili, chopped
½ inch Ginger, smashed
¼ tsp AJI-NO-MOTO®
1 tsp Salt
2 tbsp Vinegar
½ tsp Fish sauce
½ tbsp Corn starch, mix with some water
1 stalk Coriander leaf, diced
  1. Mix rice flour, wheat flour, AJI-NO-MOTO®, salt and cold water. Mix until well combined.
  2. Heat the cooking oil. Coat the spinach leaves with the batter. Fry until golden yellow.
  3. To prepare the sauce, dissolve palm sugar with water in a pot.
  4. Add in red chili, ginger, AJI-NO-MOTO®, salt, vinegar and fish sauce. Simmer over low heat.
  5. Add in corn starch mixture and stir until thicken. Remove from heat.
  6. Add in coriander leaf and mix well.
  7. Ready to serve.
