"Kuay Teow Reua" refers to Thai boat noodles. This well-known Thai noodle soup came from Thai floating markets, where merchants hawked noodles out of their boats. Boat noodles are renowned for having a strong broth, meaty toppings and unique flavour with well balance in sweet, salty and spicy undertones.

100 g | Beef meat |
2 pips | Garlic, crushed |
3 nos | Shallots, cut to quarter |
2 inches | Ginger, crushed |
1 stalk | Lemongrass |
1 pc | Celery |
3 stalks | Coriander root |
1 small | Cinnamon stick |
1 pc | Star anise |
3 pcs | Cloves |
3 pcs | Cardamoms |
1 tsp | Coriander seed |
1.2 liter | Water |
Ingredients B: seasoning
1½ tbsp | Fish sauce |
1 tbsp | Sweet soy sauce |
1/2 tbsp | Dark soy sauce |
15 g | Seri-Aji® Chicken Soup Seasoning Powder |
1 tsp | Aji-Shio® Flavoured Black Pepper |
1 tsp | Sugar |
Ingredients C: accompaniment
70 g | Flat rice noodles, blanched |
10 g | Water spinach, blanched |
10 g | Bean sprout |
1 stalks | Coriander leaves, chopped |
1 stalks | Chinese celery, chopped |
1 tsp | Groundnut, roast and crushed |
1 tsp | Fried shallot |
1 no | Calamansi, cut into half |
1 tsp | Chili flakes |
1 tsp | Pickle radish, chopped |
1 tsp | Pickle chili |

- In a pot, boil all ingredients (A) until the beef is tender.
- Let the broth simmer, add all seasoning.
- Take out the beef from the broth and set aside before slicing thinly.
- To serve, put noodles and water spinach in a bowl, followed by the others accompanying ingredients.
- Ready to serve with aromatic soup and slices of meat.
