Fried Mackerel in Sambal Soy Sauce
Ingredients
Ingredients A:
500 g | Mackerel (kembung), cut into fairly big pieces |
½ tsp | AJI-SHIO® Flavoured Black Pepper |
1½ tbsp | Fish curry powder |
To taste | Salt |
Some | Oil (for deep-frying) |
Ingredients B:
2 large | Red onion |
½ tbsp | Fish curry powder |
To taste | Salt |
Few dashes | AJI-NO-MOTO® |
1 medium | Tomato (ripe), diced |
1 tsp | Caramelised thick soy sauce |
2½ tbsp | Cooking oil |
2 | Red chilli, sliced |
Method
- Mix red onion, fish curry powder and salt in ingredients (B) into a bowl.
- In another large bowl, bring in the well drained fish. Season it with AJI-SHIO® Flavoured Black Pepper, salt and fish curry powder.
- Heat oil in a wok and deep fry the fish. Remove and keep aside.
- Remove the oil, leaving behind 2½ tbsp in the wok. Heat the oil. Bring in the onion mixture. Saute till onion turns translucent.
- Add diced tomato. Continue stirring till tomato turns soft.
- Add soy sauce and AJI-NO-MOTO®, stir till sauce is well mixed. Bring in the fried fish and gently stir till the fish is coated. Remove from fire.
