Recipe Description
Galangal Braised Duck
Ingredients
1 | Whole duck (2.1kg), cleaned |
¼ cup | Cooking oil |
½ cup | Sugar |
85 g | Galangal, cleaned and sliced |
1 ½ liter | Water |
2 | Honey dates |
3 | Boiled eggs |
Ingredients A: marinade
1 tsp | Dark soy sauce |
1/3 cup | Light soy sauce |
1 tsp | AJI-NO-MOTO® |
1 tsp | Salt |
1 tsp | 5 spice powder |
Method
- Rub ingredients (A) on the duck. Let it marinade for at least 2 hour or overnight.
- Heat the cooking oil and add in sugar. Let the sugar caramelized.
- On slow fire, add the duck in and glaze it evenly until browning.
- Add in galangal and let it submerse in the sauces.
- Pour in water and add the honey dates.
- Braised about 1 hour under medium heat.
- Baste the duck regularly, turn the duck and braise another 1 hour.
- On last 30 minutes, crack the egg shell and add in the wok.
- Remove the egg shell and serve together with the duck.
Tips
The whole duck can be cut into quarter size for easier cooking.
