Ingredients
Ingredients A: blend well
5 nos | Shallot |
4 pips | Garlic |
2 inches | Ginger |
2 stalks | Lemongrass |
2 inches | Galangal |
2½ tbsp | Soaked dried shrimp |
Ingredients B: gravy
1 tbsp | Cooking oil |
200 g | Fresh prawn medium size, boiled |
200 g | Fresh prawn medium size, boiled and blend with skin |
200 g | Sweet potato, boiled until cooked and mash finely |
2 tbsp | Ground chili |
3 tbsp | Beef curry powder |
1.2 liters | Prawn stock from boiled prawn |
1¾ tsp | AJI-NO-MOTO® |
1 tsp | TUMIX® Anchovies Stock |
3/4 tsp | Salt |
Ingredients C: accompaniments
2 packet | Yellow noodles, blanched |
50 g | Bean sprouts |
3 stalks | Choy sum, chopped and blanched |
As needed | Fried shallot |
4 nos | Calamansi, cut into half |
2 pcs | Red chili, thinly sliced |
2 pcs | Green chili, thinly sliced |
5 nos | Hard-boiled egg, cut into half |
3 pcs | Hard tofu, fried and sliced thinly |
Method
- Heat oil, sauté the blended ingredients (A) until fragrant, then add the ground chili and curry powder. Stir until the oil separates or when the oil floats to the top.
- Add in prawn stock, ground prawn and mashed sweet potato. Cook until boiling.
- Season with AJI-NO-MOTO®, TUMIX® and salt. Simmer until the gravy thickens.
- To serve, put yellow noodles in a bowl and top it with other accompaniments.
- Pour the gravy and ready to be served.
Tips: Serve with onion fritters as accompaniment for a mouth full of enjoyment.
