Recipe Description

Lacy Netting Pancakes with Honey Coconut Sauce

150 g Self-raising flour
¼ tsp Salt
2 Small egg, lightly beaten
50 ml Coconut milk
200 ml Water
Ingredients: sauce
170 ml Coconut milk
1½ tbsp Honey
1/8 tsp Salt
1 sachet Pal Sweet® Low-Calorie Sweetener
½ tsp Corn flour
3 Kaffir lime leaf
1. Combine flour and salt in a mixing bowl. In a separate bowl, whisk coconut milk, water and egg together.
2. Make a well in the centre of the flour. Gradually add the egg mixture. Whisk constantly until a smooth batter forms. Sieve the batter to remove any lumps.
3. Lightly grease a non-stick frying pan. Heat over medium fire. Slowly drip batter into concentric circles to form a net. Cook until set.
4. To prepare the sauce: Combine coconut milk, honey, salt, corn flour and kaffir lime leaf in a saucepan over low heat. Cook and stir occasionally for 3 – 4 minutes or until the sauce thickens slightly. Remove from heat and add Pal Sweet® Low-Calorie Sweete
