Portuguese Seafood Stew

| 3-4 tbsp | Olive oil |
| 1 no | Yellow onion, sliced |
| 1 nos | Red capsicum, sliced |
| 4 clove | Garlic, sliced |
| 2 nos | Bay leaf |
| 4 nos | Tomato, coarsely chopped |
| 280 g | Potato, cubed |
| A pinch | Saffron |
| 5 nos | Peppercorn |
| 1 ½ tbsp | TUMIX® Anchovy Stock mix with 2 cups of boiling water |
| 700 g | White fish, cubed |
| 10 nos | Shrimp |
| 10 nos | Mussel |
| Some | Coriander leave, chooped |

- Heat oil and sauté onion until transperant, add in capsicum, garlic and bay leaf, stir for 2-3 minutes.
- Add tomatoes, potato, saffron, peppercorn and anchovy stock.
- Cover and cook until potato are tender, around 15 minutes.
- Place fish cubes, shrimp and mussel.
- Garnish with chopped coriander leave.
