Recipe Description

Portuguese Seafood Stew

3-4 tbsp Olive oil
1 no Yellow onion, sliced
1 nos Red capsicum, sliced
4 clove Garlic, sliced
2 nos Bay leaf
4 nos Tomato, coarsely chopped
280 g Potato, cubed
A pinch Saffron
5 nos Peppercorn
1 ½ tbsp TUMIX® Anchovy Stock mix with 2 cups of boiling water
700 g White fish, cubed
10 nos Shrimp
10 nos Mussel
Some Coriander leave, chooped

1. Heat oil and sauté onion until transperant, add in capsicum, garlic and bay leaf, stir for 2-3 minutes.
2. Add tomatoes, potato, saffron, peppercorn and anchovy stock.
3. Cover and cook until potato are tender, around 15 minutes.
4. Place fish cubes, shrimp and mussel.
5. Garnish with chopped coriander leave.
