Potato and Kale Soup with Chicken Sausage
Ingredients
300 g | Chicken sausage |
6 nos | Shallot |
4 nos | Garlic |
6 nos | Potato large, cubed |
2-3 cup | Kale |
3 tbsp | TUMIX® Chicken Stock mix with 6 cups of boiling water |
2 tbsp | Balsamic vinegar |
4 nos | Tomato |
1 tsp | Hot sauce |
Method
- Heat some oil, cook sausage to render its fat.
- Toss in the shallot and cook 2 minutes.
- Add garlic and potato, cook another 2 minutes.
- Add chopped kale and cook for a while.
- Stir in chicken stock and vinegar.
- Reduce heat, cover and simmer for 1 hour.
- Stir in tomato and hot sauce and cook for 10 minutes.
