Potato and Kale Soup with Chicken Sausage

300 g Chicken sausage
6 nos Shallot
4 nos Garlic
6 nos Potato large, cubed
2-3 cup Kale
3 tbsp TUMIX® Chicken Stock mix with 6 cups of boiling water
2 tbsp Balsamic vinegar
4 nos Tomato
1 tsp Hot sauce

1. Heat some oil, cook sausage to render its fat.
2. Toss in the shallot and cook 2 minutes.
3. Add garlic and potato, cook another 2 minutes.
4. Add chopped kale and cook for a while.
5. Stir in chicken stock and vinegar.
6. Reduce heat, cover and simmer for 1 hour.
7. Stir in tomato and hot sauce and cook for 10 minutes.
