Ingredients: 

2 tbsp Cooking oil
1 medium Onion, chopped
1 medium Red capsicum, chopped
6 nos medium Tomato, chopped
4 pips     Garlic, chopped
2 tsp Paprika
1/2 tsp Cumin
1/4 tsp Chili powder
5 nos     Egg
1/2 tbsp AJI-NO-MOTO®
1/2 tbsp Salt
1 stalk     Fresh cilantro, chopped
1 stalk     Fresh parsley, chopped
Method
Method
  1. Heat cooking oil in a large sauté pan on medium heat. 
  2. Add onion and capsicum, cook for 5 minutes or until the onion becomes translucent.
  3. Add garlic and spices, cook an additional minute.
  4. Pour the chopped tomatoes, season with AJI-NO-MOTO and salt, stir well and bring the sauce to a simmer.
  5. Use a spoon to make small holes in the sauce and crack the eggs into each hole.
  6. Cook the eggs for 5 to 8 minutes, or until the eggs are done to your liking. Cover the pan with a lid to expedite the cooking of eggs.
  7. Garnish with chopped cilantro and parsley. Delicious to be eaten with toasted bread.
