Berries Mousse

Recipe Description

Berries Mousse

150 g Fresh strawberries
85 g Blackberries
85 g Raspberries
6 sachets Pal Sweet® Low-Calorie Sweetener
½ tbsp Fresh lemon juice
1/2 cup Water
1 tbsp Powdered gelatin
450ml Low fat non-dairy whipping cream
3 Strawberries, cut onto half
6 Raspberries
6 Blackberries
1. Puree berries then strain into a bowl to discard seeds.
2. Stir in Pal Sweet® Low-Calorie Sweetener and lemon juice. Set aside.
3. Place water in a small pan, then sprinkle gelatin. Let stand for 5 minutes.
4. Stir over low heat until gelatin is completely dissolved.
5. Add to berries mixture then refrigerate for 1 hr.
6. Whip cream until stiff peaks. Set aside.
7. Whip gelatin mixture on high speed until foamy.
8. Add cream, beat on slow speed until combined.
9. Spoon into dessert glasses. Refrigerate for 2-3 hours.
