Berries Mousse

150 g | Fresh strawberries |
85 g | Blackberries |
85 g | Raspberries |
6 sachets | Pal Sweet® Low-Calorie Sweetener |
½ tbsp | Fresh lemon juice |
1/2 cup | Water |
1 tbsp | Powdered gelatin |
450ml | Low fat non-dairy whipping cream |
Garnishing:
3 | Strawberries, cut onto half |
6 | Raspberries |
6 | Blackberries |

- Puree berries then strain into a bowl to discard seeds.
- Stir in Pal Sweet® Low-Calorie Sweetener and lemon juice. Set aside.
- Place water in a small pan, then sprinkle gelatin. Let stand for 5 minutes.
- Stir over low heat until gelatin is completely dissolved.
- Add to berries mixture then refrigerate for 1 hr.
- Whip cream until stiff peaks. Set aside.
- Whip gelatin mixture on high speed until foamy.
- Add cream, beat on slow speed until combined.
- Spoon into dessert glasses. Refrigerate for 2-3 hours.
