Classic Chicken Rendang

Ingredients:
½ Chicken, cut
Some Turmeric powder
80 g Shredded coconut (kerisik)
200 ml Thick coconut milk (in packet)
3 pcs Turmeric leaf, chopped
1 tbsp TUMIX® Chicken Stock
1 packet SERI-AJI® Masak Merah Seasoning
Some Salt
1-2 packets Pal Sweet® Low-Calorie Sweetener
1 ladle Cooking oil for sauteing
Blended ingredients:
4 stalks Lemon grass, chopped
4 inches Galangal (medium), sliced
1 inch Ginger
1 inch Turmeric
3 Onion, sliced
3 cloves Garlic
Method
  1. Coat chicken with some turmeric powder and salt. Fry until half-cooked.
  2. Heat oil, saute blended ingredients until fragrant.
  3. Add in SERI-AJI® Masak Merah Seasoning and TUMIX® Chicken Stock.
  4. Pour in coconut milk, stir until it slightly thickens.
  5. Put in chicken, followed by shredded coconut. Stir to combine.
  6. Turn off the fire and sprinkle in Pal Sweet® Low-Calorie Sweetener and some salt according to your preference.
  7. Finally, add in turmeric leaf.
  8. Mix to combine and serve.
