Ingredients A:
| 6 pcs | Chicken, cut into small |
| 1 tsp | Turmeric powder |
| Enough | Cooking oil |
| 2 nos | Shallot, cut into rings |
| 1 tbsp | Chili sauce |
| 1 tbsp | Tomato sauce |
| 1/2 tbsp | Oyster sauce |
| 1½ tsp | AJI-NO-MOTO® |
| 3/4 tsp | Salt |
Ingredients B: blend well
| 2 inches | Ginger |
| 1 no | Holland onion |
| 6 pips | Garlic |
| 4 nos | Shallot |
| Enough | Water (if necessary) |
Ingredients C: herbs and aromatic
| 2 strands | Pandan leaves |
| 6 stalks | Curry leaves |
| 1 stick | Cinnamon sticks |
| 2 pcs | Star anise |
| 4 pcs | Cloves |
| 4 pcs | Cardamom pods |
| 1 tsp | Cumin powder |
| 1 tsp | Fennel powder |
| 1 tsp | Garam masala |
| 2 tbsp | Chili powder |
| 1 tsp | Turmeric powder |
| 1 ½ tbsp | Chicken curry powder |

- Marinate the chicken with turmeric powder then fry until half cooked, set aside.
- Using the same oil, fry the shallot rings until golden brown and crispy, set aside.
- In the same wok, using only 3 tbsp of remaining oil, stir fry ingredients (B) until fragrant.
- Add in the ingredients (C) with chili sauce, tomato sauce and oyster sauce. Stir until the oil separates.
- Add in the chicken and mix well. Let the gravy reduce and the chicken fully cooked.
- Season with AJI-NO-MOTO® and salt. Top it with the fried golden crispy shallots.

With the application of AJI-NO-MOTO®, it is able to reduce about 20% of sodium while maintaining the same deliciousness of the dish.
